The baking bug bit again. There is always something that you can do with those week old bananas that have been gathering fruit flies in the corner of your kitchen. Banana bread is quick and easy and a great snack for before, during and after exercise. Each slice will give you about 30g of carbohydrate.
This recipe makes a small loaf, about 12 slices and will last a few days if you can resist for that long.
First you will need:
1/4 cup butter
1 cup white sugar
Cream these together.
2 large eggs at room temperature and beat together.
To this add these sifted dry ingredients:
2 cups white flour
pinch of salt
2 tsp baking powder
Mash 4/5 over ripe bananas and add to the mixture.
Pour the mixture into a bread tin and bake at 180 degrees for about 45 minutes. You know it is done when it is golden brown and an inserted skewer comes out dry.
